Garden 1 Week (well, almost...)

I won't be around to post this weekend but wanted to post a garden update before leaving tomorrow...It is amazing what can happen in 6 days!!!


 At first glance, the plants all look healthy and a bit bigger...
and then when you look closer....

 there are itty-bitty baby tomatoes !

 And the green beans are starting to poke up...

 along with their trellis-mates the sugar peas.

 Even the spinach is poking up to say hi!

The little blue gnome and the garden fairies are doing great so far! I think I'm going to enjoy this little garden.

Wednesday Recipe

This week in keeping with the trying to work out and eat healthier theme I have decided to share a recipe that has become a breakfast staple for me. The great things about this recipe is that you make it ahead and can vary it in so many ways...

Basic Overnight Oats
1/2 cup Oats (not instant or quick cook, I prefer Country Choice Multi Grain Hot Cereal from Trader Joe's)
1 cup Vanilla Almond Milk

Combine the oats and almond milk in a covered bowl and place in the fridge overnight. Add desired mix-ins and enjoy!

The basic recipe has 220 calories, 3.5 grams of fat, 45 grams of carbs, 6 grams of fiber and 6 grams of protein.

Some of my favorite mix-ins are:
1/2 banana
blueberries
1 tbsp nut butter
fruited Greek yogurt
cinnamon
vanilla extract

Last Thursday I had the pleasure of spending the evening at Falls Park with my camera. It was a beautiful day with great company (Thanks Aunt Linda!) and I hope you enjoy a few of my favorite pics from the day!

May? Really???

I totally can't believe it will be May tomorrow, since I started in my current position at work the time has flown by. There have been some good things too, I have been taking a photography class that has been great and I will post photos from the class soon but today, in keeping with the spring theme we have my most recent undertaking...a garden!
This is my first attempt at a raised bed/ container garden and we have all the important stuff....


Tomatoes & Cucumbers! (There are also a few green bean and sugar peas planted along the trellis)


 Cherry Bomb Peppers...


Basil...a necessity with fresh tomatoes... 


 Chives & Cilantro


A Strawberry... and there are also spinach seeds planted  (yumm, spinach salad!)


And a little blue Gnome to watch over it all!!!

Thursdays....

What should my Thursday theme be? I have been contemplating my daily themes today and I think Thursday will be spinning which I have not done much of recently. So...on that note I am off to dig through my bin of fiber and spend sometime at my spinning wheel. Perfect thing to do on a rainy, sleety night don't you think?

How is it February already????

Where has this year gone already??? So much has happened in the last couple months, a new home and a new job...it is nice to have more of my own things back with me and Barron is a happy puppy.
Going to give the blogging thing a try with a theme for each day. I think Wednesday will be my day to share a recipe.

Italian Dry Herb Dipping Mix
1 Tbsp Crushed Red Pepper
1/2 Tbsp Lemon Pepper
1/2 Tbsp Black Pepper
1 Tbsp Oregano
1 Tbsp Rosemary
1 Tbsp Sweet Basil
1 Tbsp Parsley
1 Tbsp Granulated Garlic
1 Tbsp Coarse Sea Salt
1 tsp Thyme

Combine all ingredients and mix together. (I prefer it pulsed briefly in a food processor)
When serving place a small amount on a shallow dish and add olive oil, serve with crusty bread for dipping.
